Roasted Spatchcock Chicken

Yield: 1 whole chicken/4-6 servings

Total time: 1hr 30min


1. Preheat pellet grill 375f
2. Spatchcock the whole chicken by removing the back bone and pressing the chicken flat
3. Pat the chicken dry and spray the whole bird with duck fat cooking spray
4. Starting with the bottom side, season whole bird with Spiceology Sasquatch mother plucker rub
5. Place chicken on wire rack and place directly on grill grates
6. Roast until the chicken hits 145f internal, at that point spray the entire skin surface of the chicken again with duck fat spray
7. Increase grill temp to 450
8. Continue to cook until the deepest part of the chicken breast reaches 165f
9. Remove from grill and let rest for 10 minutes
10. Dig in!
